Perch and Fish Fries

A large percentage of perch served during fish fries around the U.S. comes from Europe or Asia, which has researchers here working to raise yellow perch in a controlled environment. This will preserve the species, and enhance food production. A long-term goal is to make perch farming a viable aquaculture industry here in the Midwest.
